Hey. Long time, no talk. Or type I guess, for me. I could list the reasons I haven’t posted in 5 days (lack of wifi, flying back home, party) but that would be boring and I’m sure you’d rather have a recipe and pictures. So I’ll go with the latter.
And now onto that recipe I promised….
Healthier French Toast
What You’ll Need:
-6 slices of any type of thick, hearty bread (Ezekiel, Shepard, or a Whole Wheat loaf would suffice)
-1 1/4 cup of unsweetened almond milk
-2 T of orange juice
-1 T of vanilla
-1 T of agave, maple syrup, or honey
-1 whole egg
-2 egg whites
What You’ll Do:
1. In a large mixing bowl, put all ingredients except bread in and whisk until slightly frothy
2. Turn on griddle or heat up a nonstick pan to medium heat and spray pan with cooking spray (just in case).
3. Dip bread in egg mixture and then cook slices until the bread is firm and golden brown.
4. Flip and repeat, then top with whipped cream, berries, more maple syrup or cinnamon!
