MIMM #10- Not A Whole Lot

Happy Monday, my little perogies (it’s spelled incorrectly, I know.)! Not a whole lot went on this weekend… Seriously. I watched multiple vamp movies, ate my body weight in guacamole, and had a nice long sleep. The only ‘cool’ thing that happened was that my mother gave me 2 of her old bags (one looks like ¬†mini Berkin bag!) So I’ll post some inspiration, motivation, and drool worthy food porn.

MIMM #8- Marvelous Recipe Monday

Hi folks! Hope your Monday is going/went well (as well as Monday’s can be).

Because of the fact that I did nothing this weekend (I watched Netflix with my mother for a good 48 hours), I decided to post 3 fantastic marvelous recipes that I’ve been loving lately!

Tangy, Crunchy Tuna Salad

Time: 5 Minutes

What You’ll Need:

1 can of chunk light tuna (preferably in water)

1-2 T of greek yogurt (depending on how wet you like your tuna salad)

1 stalk of celery, finely chopped

1/2 of a green apple, finely chopped

1 t curry

Sprinkle of salt and pepper

1/2 t garlic powder

What You’ll Do:

1. Mix ingredients together until thoroughly combined.

2. Enjoy on top of spinach, rice cakes, crackers, or by itself!

Sugar/Gluten Free “Cookie Dough”

Time: 15 Minutes

What You’ll Need:

4 T of Greek Yogurt

1/2 t of vanilla extract (anymore will be too overpowering)

1/2 t of cinnamon

1 t of agave nectar/xylitol/stevia

1 T of peanut/almond butter

Mix In’s: Chocolate chips, raisins, butterscotch chips, pretty much anything you put in cookies!

What You’ll Do:

1. Melt peanut butter for 35 seconds or until completely melted.

2. Put in freezer for 10 minutes until cool

3. Mix all other ingredients and serve with pears, apples, crackers, etc

( No picture! I figure you know what cookie dough looks like ūüėõ )

Zoe’s Favorite Panini

Time: 15 Minutes

What You’ll Need:

2 slices of Ezekiel Bread

1 slice of Swiss Cheese

1 T of mozzarella

1/2 pear, sliced thin

1 t dijon mustard

1 piece of prosciutto, thinly sliced

Cooking Spray

What You’ll Do:

1. Turn on panini press/pan to medium.

2. Spray bread with cooking spray (or butter if you’re feeling extra special)

3. Layer bread, dijon, swiss, pear, prosciutto, pear, mozzarella, dijon, and place on grill. Cook until brown.

4. Flip and cook until golden and delicious, then serve.

MIMM #7- It’s Just Another Manic Monday

Hello my little doves! Happy Monday (ignore the oxymoron). I’d say this weekend went by incredibly fast, unfortunately, because now I have to wake up early and work. Although babysitting isn’t too much work. Anyways. Lets do this MIMM! Thanks Katie for hosting again!

1. Marvellous is not having to clean my room because if a showing. I slept in on Sunday and thoroughly enjoyed my uninterrupted slumber without having to get up and dust and wipe and vacuum.

2. Marvellous is a must needed facial. Thank god for Massage Envy. My skin is now glowing and slowly getting clearer.

3. Marvellous is running again. After 3 weeks without it, I can say I’ve missed it so much. I almost died/threw up but hey, what’s exercise without a bit of exertion. Ill be running all the time now!

4. Marvellous was lunch yesterday! I roasted bell pepper, swaii (a white fish with a very mild flavor and firm texture), some spices and topped the whole thing over some spinach and Kerrygold aged white cheddar. It was amazing.

5. Marvellous is makeup! I bought Revlon Just Bitten lip stain (which to me resembles a Clinique Chubby Stick) in a beautiful fuchsia color, a Maybelline Bouncy Blush in Peach Petal, and a bottle of Not Your Mother’s frizz cream. It was, all in all, an awesome little pick me up.

6. Not so marvellous is my lack of pictures. I’m sorry. I was quite busy and ended up snapping only what I could. Including:

MIMM #5- Amusement Parks and Not So Clean Eating

Now on a bit more of a serious note; whilst being on vacation I feel like I’ve been slacking on my workouts and clean eating. But where I’m staying at the moment, my access to healthy food is very very limited. I’ve basically been surviving off of protein bars that I got when I was with my dad and bananas. I know that I should just enjoy myself while on vacation but I still want to be relatively healthy. Luckily today ill be walking around/on my feet for a good 10 hours. I’m just worried about Tuesday-Thursday. Any suggestions or help would be appreciated! Thanks!

MIMM #4- Final Michigan Recap, Onion Rings, and Clean Eating

Happy July 1st! I cannot believe it’s already halfway through the year. Time to start Christmas shopping! Anyways, there are more important things to discuss… LIKE LITTLE BABY ROCCO! Healthy Diva Eats (The founder of MIMM) had her little baby boy yesterday! Congrats for the fifth time Katie, and thanks for hosting again!

We left Michigan early Saturday morning and began the 14 hour trek home. I slept for a good portion of it, but I did take a couple pictures that I thought we spark some interest.

I have apparently been spelling my name wrong all my life. I was sure it was spelled Zoe.¬†Looks like I’m going to have to change all my information now……. I’m kidding. That’s a lot of wasted ink on extra vowels.

For lunch we stopped in Mackinaw after we saw a quaint family restaurant called Darrow’s. I was good (and after a week of crappy eating, I needed to be good) and got the Raspberry Chicken Salad. I asked for no cheese and dressing on the side, just to be sure.

My dad, however, stuck with a fish sandwich and onion rings the size of his head… And he has a¬†really¬†big head.

When we got back I made some eggs, checked and caught up on some blogs, and fell asleep.

Sunday I woke up and ran! It was a slow and painful run as I haven’t been running since before I left. I know. I can feel your glares from here. It’s an embarrassing distance and an even more embarrassing was my average mile time. I need tissues.

But! The good news is I’m going to start running every day! My goal is to be able to run 5 miles easy by the beginning of school again. Okay maybe by Halloween.

After I showered and dressed etc, I drove down to my grandparents house and visited. My brother from another mother showed up as well but promptly left about an hour later. Some of us have lives I guess. The rest of my day was laid back and relaxing, as Sunday’s should be.

I also went for a nice 2 mile walk around the park/creek with these guys. Let’s just say the ride back was a little… Damp.

I’m starting to eat a lot more… Cleanly (Is that the proper word?) I’ve really stopped focusing on the carbs and amount of calories (well I still¬†care but I’m a little less restrictive)! I feel better, and I think I look better. Hopefully I can keep it up through all the Fourth of July BBQ’s and cook outs this summer! If you have any advice, please comment below! I’d love to hear some of your opinions on the matter.

Well! I need to go exercise and such! I’ll see you guys for a possible Things I Know Tuesday but definitely a WIAW!

MIMM #3- Mackinaw and Michigan So Far

Hey y’all! Since I have a lack of wifi and service up here I’m going to jump right in. Thanks Katie, for hosting once again! If you don’t know what Marvellous in My Monday is, after to finish reading my post go check Ms. Katie out for more awesome posts!

1. Marvellous is Mackinaw! The ice cream, the pizza, the views. I can’t really describe how awesome it was, even for one cloudy, foggy day!

2. Marvellous is finding out I love red beans! My step mom cooked up a bunch for the week and I have literally had them for every meal. I’m not sorry.

3. Marvellous is finally getting out of the car after the final 5 hour treck to get up to the UP. It’s beautiful up here, but it’s a trip, I’ll tell you.

4. Marvellous is hiking right along Lake Superior! We decided to get off our butts yesterday and went kayaking, came back and ate, then went for a nice long walk/hike on a trail that took us around to the lake. Here are some Pictures because I can’t honestly describe it myself.

4. This one is marvellous and not so marvellous. It began topour after dinner last night. And we, as the idiots we are, went fishing right after. I have at least 10 bug bites thank you very much.

Sorry for the late posting, but I’ve been a bit busy all day… Fishing!

Although I don/t have any pictures (Mainly because we didn’t catch anything), It was wonderful! I got a nice tan and got to hang out on the water.

I also have sun burn marks littered around my legs. Whoever allowed me to where ripped up jeans today should be given a time out.

Father’s Day was this weekend (If you were unaware) and my grandparents finished there cross-country drive from Florida! We relaxed and played some games and hit the hay.

It was a nice warm bale of hay just in case you were wondering.

We visited a winery (where I didn’t drink). Please ignore the blurriness as my brother decided to walk through my camera’s view right before I took it. I also almost got hit by a car. I really love you guys that much.
