MIMM #9 Classes, Smoothies, and Such

Hey Y’all! Happy Monday night. I promise I’ll start to get my posts published earlier but what with Student Body projects and getting my schedule for this year’s classes, today was a bit of a late one. Oops. I’ll be trying to get my posts typed up the night before, then posted in the morning. So that is the plan! 

Speaking of school, I start Wednesday! Which makes me both nervous and happy. I’m excited for the new people and the new classes and the new subjects. I’m taking the basics (English, Maths, AP History, Chemistry) but I’m really excited for Fashion Construction! I’m not sure if I’ve mentioned it, but I have a small fashion/beauty/Carrie Bradshaw obsession and therefore squealed when I found out about getting into a class where we design and wear our own handmade clothes. I’m happy to say the least. 

So let’s talk weekend, hmm? 

After my beach retreat, I headed home, ate some deep dish pizza (after not really eating much all day) and hit the hay. The next day my family hosted a poker/pool party and I relaxed with some friends and watched Beautiful Creatures with a plate full of low-fat sliders (my creation thank you very much), my guacamole, some crudités, and a couple little baby brownies. YUMMMMMMMMM. Sunday was relaxed. I drew a bit, did some cleaning, ate, and watched the last episodes of Shark Week. See you next year, Sharkies! And now tomorrow is Tuesday. My last day of freedom. I intend on watching Netflix, maybe working out, and finishing some little things here and there. 

But hey, I promised a smoothie! Here’s my new fave:

Tropical Smoothie

Serves: 1

What You’ll Need:

2 cups frozen tropical fruit (I used a target brand frozen pack of peaches, pineapple, banana, and mango)

1/4 cup plain yogurt

1/4-1/2 cup milk of choice (really just enough to get everything moving)

What You’ll Do:

1. Put all ingredients in a blender and puree!

2. Enjoy with a spoon and a smile.

Most Wanted #1

Well. OOPS is all I can say. Between a lack of time, lack of wifi, and an utter lack of motivation, I ended up slacking this week. But we all have those kinda weeks, right? So to make up for it, I’m going to make a big ole post. I would really love to start doing more fashion/makeup/etc posts. So here we go. Get settled. This is going to be a big one.

Most Wanted Piece of Clothing: 

If you read my lately post, you would know I really love fall fashion and all that jazz. But my most wanted article of clothing is definitely this beautiful black dress.

I love that it’s appropriate for class with either ballet flats or some black boots, but it can be easily dressed up with a pair of black heels and a leather jacket.

Most Wanted Recipe:

These Pumpkin Scones. I really, really love pumpkin. And scones just push it over the edge.

Most Wanted School ‘Accessory’:

A beautiful, girly, colorful Lily Pulitzer agenda. I’ve heard nothing but good comments about it and with all my classes and workouts and after school activities, I’m going to need something this structured and large.

Most Wanted Drink:

Three words. Pumpkin. Spice. Latte.

Most Wanted Workout:

I need to try a spinning class! Everyone talks so highly of them and I think it would be a great sweatathon! My gym needs to get their stuff together!

Most Wanted Album:

Birdy’s new album! It looks amazing (although I believe it is an EP)

Most Wanted Makeup Product:

Chanel Vitalumiere Aqua foundation! It’s light and hydrating (although I have combination skin so I might want the matte version) and it’s a cult product. Not that that makes me want to buy it more because it does.

WIAW #7 A New Recipe and Other Yummy Stuff

Hi friends! Happy HUMP DAY! I’ve got a new recipe for y’all, so lets hop right into it!

Breakfast 9:00- I had a super simple breakfast today consisting of plain yogurt, vanilla extract, a sprinkle of cinnamon, blueberries, and Kashi Cinnamon Crunch.

Lunch 1:00– Last night’s stuffed peppers left us with about 5 peppers worth of the rice and vegetable stuffing. So I put a bit of that on top of some baby spinach, microwaved, and topped with hot sauce. It was a filling, delicious, healthy lunch that kept me full for a while.

Workout (Sorta)- Throughout the day I did the following tabata workout: Burpees, Mountain Climbers, High Knees, Jumping Jacks. It left me a but winded but I did it a couple times an hour just because of the insane heat outside left me wanting to keep it quick and sweaty.

Dinner 7:00- Step-Dad made a super delicious pork loin that I enjoyed with a couple spears of asparagus and broccoli. ’twas wonderful! (Ignore the blurry iphone photo!)

Miscellaneous Snacks and Such: I ate about 3/4 of a Cliff Crunchy PB bar throughout the day.

And after dinner I indulged in banana ‘ice cream’ and a small brownie. It was worth it. Trust me.

Now it’s recipe time! I decided to move away from my loyal yogurt mess and drift into my old favorite, oatmeal! Here’s an easy and delicious steel oat recipe!

Banana Blueberry Steel Cut Oats

Servings: 2

What You’// Need:

1/2 cup of steel cut oats
1 banana, thinly sliced
1/2  cup of blueberries (frozen works best)
1 1/3 cup water
2/3 cup milk of choice
1 teaspoon cinnamon
Pinch of nutmeg
Optional: Sweetener of choice and add ins
What You’ll Do:
 
1. Take water and oats and put into a small pot. boil water.
2. Once the water is boiling add in spices and milk, stir, and reduce heat to medium low. Cook for 20-25 minutes or until the mixture is thick and creamy, stirring frequently. Take the oats off the heat when there is little to no residual liquid left (depending on how you like your oats, you can leave the extra liquid)
3. Here comes the fun part: Take the sliced banana, pour into the pot, and vigorously stir to incorporate the banana thoroughly. When the banana has almost disappeared, add in blueberries.
4. Serve! Pour into a bowl and top with sweetener (agave, xylitol, stevia, honey) and add ins (flax seed, raisins, peanut butter, almond butter, granola)
5. Enjoy with a nice cuppa tea or coffee.

This month flew by! And the worst part is… I go back to classes in 10 days. I might cry. What ever shall I do?! Well, I should write this Currently post. Let’s get that out of the way, hmm?

Current Book Series: The Divergent Series. It’s about a dystopian Chicago where each person is “meant to uphold a particular virtue of humanity: Abnegation (the selfless), Amity (the peaceful), Candor (the honest), Dauntless (the brave) and Erudite (the intelligent). On a given day each year, all sixteen-year-olds take an aptitude test that will tell them which faction they are best suited for, after which they must decide whether to remain with their family or transfer to a new faction.” It has action, violence, love, and it pulls you in within the first sentence. Trust me. I read both Divergent and Insurgent in 2 days.

Current Drink: Water. (Tangent: I got terrible food poisoning on Friday – hence why this wasn’t posted yesterday – and basically laid on the couch, slept, wallowed in sickness, and watched Disney movies. I won’t be having pizza or greek salad for long time.)

Current Food: Bananas. It’s the only thing I can really tolerate.  And eggs with a bit of pepper.

Current TV Show(s): Teen Wolf (rewatching seasons one and two currently!), The Pioneer Woman, and Supernatural!

Current Wish List: Plaid skirts, lots of patterned tops and dresses, and boots – black or brown, knee high or low, moto or equestrian-.

Current Outfit: Oh god. This is embarrassing. Duck Commander tee, glow in the dark cookie PJ shorts, and a bun. I’m so glamourous.

Current Excitement: Beach party on Friday with student body! Meaning I will lay on the sand and listen to the DJ.

Current Mood: Relieved. I’m not barfing everywhere. YAY!

Friday Facts #7- A Random Assortment

Happy Almost Weekend, friends! I can’t believe this week went by so fast. It’s a bit depressing since I start school in 12 days. But for those of you who work all year, I’m clapping for you. I work over the summer and a few times here and there throughout the year, so props to those who work 80 work weeks.

So lets get some facts up in here!

1. I’m writing this whilst eating my step dad’s amazing chocolate chip banana bread. It may not be the healthiest, but it has banana and walnut (maybe some whole wheat in there) and it’s delicious. Coffee and blueberry Chobani is also for breakfast!

2. Today is actually my last full day of work (that I know of) for the summer! Although I love watching the little cutie pies, I’m glad ill have a couple weeks to really ‘summer’ it up. All nighters, Netflix, killer workouts and more recipes are to come!

WIAW #6 Girl’s Night Out

Happy Hump Day y’all! Since I don’t want you to wait,  took pictures of what I ate Tuesday, rather then Wednesday (which is what I normally do but I wanted to inform you in case any of you were curious… I bet you guys weren’t).

Let’s begin then!

 

Breakfast 9:30- I had a student body meeting at noon, so I got up and primped (during summer I don’t really dry my hair or do makeup, but since I had to present various things, I dried and curled and whatnot. I then went downstairs and gorged myself  ate my usual bowl of yogurt. This time: Lemon Chobani, blueberries, Kashi, and flax seed (of course). It was a great way to start my busy day!

Snack 10:45- I noshed on a plum after about an hour since the yogurt just wasn’t doing it for me.

I love plums. Too bad I ate them all in 3 days.

Lunch 3:15– I went to my meeting which I thought was only going to last an hour, hour and a half tops. Try double that. I didn’t get home until 3:10 and was starving by then. Even though I knew my mother and I were going out for dinner, I still had a good sized ‘lunch’ of tuna salad on toast.

Workout 4:30- I started with 15 minutes on the elliptical, then did some ab exercises for about 15 minutes, and did a bit more cardio and followed that pattern for a little over an hour. I was dripping with sweat and ready to eat!

Dinner 6:30- Girl’s Night Out was at PF Changs, which is generally where we go since it’s on the same street as the shops and the mall. We did the Prix-Fix menu (you choose a soup, appetizer, 2 entrees, and a small dessert) and picked the following:

I’m kind of weird, but I use the smaller appetizer plate to eat my entree off of. I eat less, and I feel fuller since I eat everything on my plate. I also pick a few more pieces of meat and veg, but for the most part, I eat 1/2 as much food as I would if I ate off the larger entree plate. Just a little tip (;

MIMM #8- Marvelous Recipe Monday

Hi folks! Hope your Monday is going/went well (as well as Monday’s can be).

Because of the fact that I did nothing this weekend (I watched Netflix with my mother for a good 48 hours), I decided to post 3 fantastic marvelous recipes that I’ve been loving lately!

Tangy, Crunchy Tuna Salad

Time: 5 Minutes

What You’ll Need:

1 can of chunk light tuna (preferably in water)

1-2 T of greek yogurt (depending on how wet you like your tuna salad)

1 stalk of celery, finely chopped

1/2 of a green apple, finely chopped

1 t curry

Sprinkle of salt and pepper

1/2 t garlic powder

What You’ll Do:

1. Mix ingredients together until thoroughly combined.

2. Enjoy on top of spinach, rice cakes, crackers, or by itself!

Sugar/Gluten Free “Cookie Dough”

Time: 15 Minutes

What You’ll Need:

4 T of Greek Yogurt

1/2 t of vanilla extract (anymore will be too overpowering)

1/2 t of cinnamon

1 t of agave nectar/xylitol/stevia

1 T of peanut/almond butter

Mix In’s: Chocolate chips, raisins, butterscotch chips, pretty much anything you put in cookies!

What You’ll Do:

1. Melt peanut butter for 35 seconds or until completely melted.

2. Put in freezer for 10 minutes until cool

3. Mix all other ingredients and serve with pears, apples, crackers, etc

( No picture! I figure you know what cookie dough looks like 😛 )

Zoe’s Favorite Panini

Time: 15 Minutes

What You’ll Need:

2 slices of Ezekiel Bread

1 slice of Swiss Cheese

1 T of mozzarella

1/2 pear, sliced thin

1 t dijon mustard

1 piece of prosciutto, thinly sliced

Cooking Spray

What You’ll Do:

1. Turn on panini press/pan to medium.

2. Spray bread with cooking spray (or butter if you’re feeling extra special)

3. Layer bread, dijon, swiss, pear, prosciutto, pear, mozzarella, dijon, and place on grill. Cook until brown.

4. Flip and cook until golden and delicious, then serve.
