MIMM #8- Marvelous Recipe Monday

Hi folks! Hope your Monday is going/went well (as well as Monday’s can be).

Because of the fact that I did nothing this weekend (I watched Netflix with my mother for a good 48 hours), I decided to post 3 fantastic marvelous recipes that I’ve been loving lately!

Tangy, Crunchy Tuna Salad

Time: 5 Minutes

What You’ll Need:

1 can of chunk light tuna (preferably in water)

1-2 T of greek yogurt (depending on how wet you like your tuna salad)

1 stalk of celery, finely chopped

1/2 of a green apple, finely chopped

1 t curry

Sprinkle of salt and pepper

1/2 t garlic powder

What You’ll Do:

1. Mix ingredients together until thoroughly combined.

2. Enjoy on top of spinach, rice cakes, crackers, or by itself!

Sugar/Gluten Free “Cookie Dough”

Time: 15 Minutes

What You’ll Need:

4 T of Greek Yogurt

1/2 t of vanilla extract (anymore will be too overpowering)

1/2 t of cinnamon

1 t of agave nectar/xylitol/stevia

1 T of peanut/almond butter

Mix In’s: Chocolate chips, raisins, butterscotch chips, pretty much anything you put in cookies!

What You’ll Do:

1. Melt peanut butter for 35 seconds or until completely melted.

2. Put in freezer for 10 minutes until cool

3. Mix all other ingredients and serve with pears, apples, crackers, etc

( No picture! I figure you know what cookie dough looks like 😛 )

Zoe’s Favorite Panini

Time: 15 Minutes

What You’ll Need:

2 slices of Ezekiel Bread

1 slice of Swiss Cheese

1 T of mozzarella

1/2 pear, sliced thin

1 t dijon mustard

1 piece of prosciutto, thinly sliced

Cooking Spray

What You’ll Do:

1. Turn on panini press/pan to medium.

2. Spray bread with cooking spray (or butter if you’re feeling extra special)

3. Layer bread, dijon, swiss, pear, prosciutto, pear, mozzarella, dijon, and place on grill. Cook until brown.

4. Flip and cook until golden and delicious, then serve.

Whole wheat tortilla, carne asada, spinach, my homemade guac, and fresh salsa… And some tortilla chips to ‘sample’ the guac, of course

Well that’s all she wrote! I did have a but more spinach and carne and was sufficiently stuffed. See you on Friday with that recipe for the tuna!
