WIAW #7 A New Recipe and Other Yummy Stuff

Hi friends! Happy HUMP DAY! I’ve got a new recipe for y’all, so lets hop right into it!

Breakfast 9:00- I had a super simple breakfast today consisting of plain yogurt, vanilla extract, a sprinkle of cinnamon, blueberries, and Kashi Cinnamon Crunch.

Lunch 1:00– Last night’s stuffed peppers left us with about 5 peppers worth of the rice and vegetable stuffing. So I put a bit of that on top of some baby spinach, microwaved, and topped with hot sauce. It was a filling, delicious, healthy lunch that kept me full for a while.

Workout (Sorta)- Throughout the day I did the following tabata workout: Burpees, Mountain Climbers, High Knees, Jumping Jacks. It left me a but winded but I did it a couple times an hour just because of the insane heat outside left me wanting to keep it quick and sweaty.

Dinner 7:00- Step-Dad made a super delicious pork loin that I enjoyed with a couple spears of asparagus and broccoli. ’twas wonderful! (Ignore the blurry iphone photo!)

Miscellaneous Snacks and Such: I ate about 3/4 of a Cliff Crunchy PB bar throughout the day.

And after dinner I indulged in banana ‘ice cream’ and a small brownie. It was worth it. Trust me.

Now it’s recipe time! I decided to move away from my loyal yogurt mess and drift into my old favorite, oatmeal! Here’s an easy and delicious steel oat recipe!

Banana Blueberry Steel Cut Oats

Servings: 2

What You’// Need:

1/2 cup of steel cut oats
1 banana, thinly sliced
1/2  cup of blueberries (frozen works best)
1 1/3 cup water
2/3 cup milk of choice
1 teaspoon cinnamon
Pinch of nutmeg
Optional: Sweetener of choice and add ins
What You’ll Do:
1. Take water and oats and put into a small pot. boil water.
2. Once the water is boiling add in spices and milk, stir, and reduce heat to medium low. Cook for 20-25 minutes or until the mixture is thick and creamy, stirring frequently. Take the oats off the heat when there is little to no residual liquid left (depending on how you like your oats, you can leave the extra liquid)
3. Here comes the fun part: Take the sliced banana, pour into the pot, and vigorously stir to incorporate the banana thoroughly. When the banana has almost disappeared, add in blueberries.
4. Serve! Pour into a bowl and top with sweetener (agave, xylitol, stevia, honey) and add ins (flax seed, raisins, peanut butter, almond butter, granola)
5. Enjoy with a nice cuppa tea or coffee.

WIAW #6 Girl’s Night Out

Happy Hump Day y’all! Since I don’t want you to wait,  took pictures of what I ate Tuesday, rather then Wednesday (which is what I normally do but I wanted to inform you in case any of you were curious… I bet you guys weren’t).

Let’s begin then!


Breakfast 9:30- I had a student body meeting at noon, so I got up and primped (during summer I don’t really dry my hair or do makeup, but since I had to present various things, I dried and curled and whatnot. I then went downstairs and gorged myself  ate my usual bowl of yogurt. This time: Lemon Chobani, blueberries, Kashi, and flax seed (of course). It was a great way to start my busy day!




Snack 10:45- I noshed on a plum after about an hour since the yogurt just wasn’t doing it for me.

I love plums. Too bad I ate them all in 3 days.

Lunch 3:15– I went to my meeting which I thought was only going to last an hour, hour and a half tops. Try double that. I didn’t get home until 3:10 and was starving by then. Even though I knew my mother and I were going out for dinner, I still had a good sized ‘lunch’ of tuna salad on toast.



Workout 4:30- I started with 15 minutes on the elliptical, then did some ab exercises for about 15 minutes, and did a bit more cardio and followed that pattern for a little over an hour. I was dripping with sweat and ready to eat!

Dinner 6:30- Girl’s Night Out was at PF Changs, which is generally where we go since it’s on the same street as the shops and the mall. We did the Prix-Fix menu (you choose a soup, appetizer, 2 entrees, and a small dessert) and picked the following:

I’m kind of weird, but I use the smaller appetizer plate to eat my entree off of. I eat less, and I feel fuller since I eat everything on my plate. I also pick a few more pieces of meat and veg, but for the most part, I eat 1/2 as much food as I would if I ate off the larger entree plate. Just a little tip (;

WIAW #4 Kid Food and Pubbing

HAPPY HUMP DAY! *Insert Camel whooping* I ate, I cried (well, the babies cried), and I did not exercise. It may have been an unproductive day but the food was wonderful.

Breakfast 6:15- A really quick breakfast thrown together before work: plain Chobani mixed with vanilla and a dash of agave, then topped with Kashi Berry Crunch. I prepared a mug of hot lemon and cayenne water and headed out!

Lunch 1:30- After grocery shopping and finally getting the kids asleep, I grabbed some lunch which was a few chicken tenders (ah nostalgia) and pasta salad. Not exactly the healthiest luch but I was starving and it was 1:30 and the pasta salad was the bomb.

I continued drinking my lemon-cayenne and worked until 5, then got home, grabbed my lipstick and ran out the door with the family to go check out our new house! I haven’t really mentioned it before since the offer was still pending, but now (besides some paper work and an inspector visit) we are ready to get in! Well, if we can sell our house. Anyways back to the food …

Snack 5:30- Whilst at the house, I picked a few plums and oranges to steal and eat eat when I got home. The current owner of the property is extremely kind and gave my brother and I a bag (Trader Joes! I thought it was funny. Sorry) and we grabbed some fruit to go. I ate one. #sorryimnotsorry. It was the best plum I’ve had.

Dinner 7:00- We went to a local Irish Pub and therefore I did away with the idea of a salad and ordered a veggie burger topped with mushrooms and onion and a small salad. I needed my greens 😉 It was awesome! And I may have stolen a few potatoes and corn beef from my family. What can I say? Irish food makes me happy.

WIAW #2- Michigan Trip!

Happy Wednesday, little doves! I’m still in Michigan (until Saturday) and I’m loving it! Well, I don’t love mosquitoes and black flies but you got to deal with it if you want to see things like this…

Yeah. It’s pretty awesome. BUT! It’s time for What I Ate Wednesday! Once you’re done reading this little post, go on over to Peas and Crayons and thanks Jen for hosting yet again!

Breakfast was simple and summery: 1 whole egg plus one egg white with a sprinkle (and a half 😉) of cheddar cheese. With some supppppeeerrrr sweet strawberries! Yum.

Lunch was equally awesome. It was awesome opossum, some would say. I was starving after a good hour and a half of kayaking. It was a very nostalgic peanut butter sandwich on sesame Ezekiel with a side of romaine. And an unpictured 1/3 of a chicken breast for a little protein kick. Oh. And more strawberries.

Snacks were scattered and constant. I’m an eater. I won’t apologise. Almonds, more unpictured chicken, and a bunch some peanut butter eaten right off a spoon.

Dinner was amazing thanks to my parents. I did nothing. I’m ashamed. A plain burger, some romaine, onion, a spoonful of guac and some red beans. I wasn’t all that hungry (which doesn’t make sense since my plate was full), so I didn’t eat my beans. My dad enjoyed them though.

I got kinda hungry after about 1.5 hours and grabbed some berries, peanut butter (I’m going to Nut Butteraholics Anonymous when I get back) and some chocolate. It is vacation after all. Yeah I just ate the berries. I’m so wasteful these days.

Breakfast was already shown but I’ll refresh your memory! My favorite breakfast lately: yogurt, fruit, coffee!



Lunch was eaten after I finished my last exam (Which I think I aced). This was a super amazing scrumptious salad. In the mix: chicken, spinach, walnuts, and roasted garlic balsamic/olive oil mix. I gobbled this up while I caught up on DVR. Yummy!


Dinner was as promised: Tacos! Ever since I really started lowering my carb intake and upping my protein, I’ve stopped having actual tacos. I take the protein, lettuce (or spinach for this dinner), salsa, cheese, and guacamole (which we unfortunately did not have. Tears may have been shed)… Plus a couple tortilla chips for crunch. No tortillas in sight! Who needs tortillas when you can have double the meat?!Image

I didn’t take any pictures of my snacks, but they were a banana during my break between exams, and two hard boiled egg whites and peanut butter right out of the jar. What can I say. It’s the best that way.
